Blackie Bean & Sweet Potato Tacos
This dish is a hint spicy and a tad-bit sweet, delicious, delicious!
1 sweet potato, cubed
1 can black beans
1 T agave
1/2 cup water in two parts
1 packet organic black bean seasoning
1 clove garlic
1/2 med onion
few dashes of crushed red pepper
Wheat tortillas or corn tortillas
Fave vegan cheese, I use Almondrella
Place garlic and onion in skillet and brown, set aside.
Add 1/4 cup water to skillet followed by agave and sweet potatoes, boil on medium heat until tender.
Keep a small amount of water until potatoes are done.
Add onion mixture, black beans and seasoning + 1/4 cup water, turn down heat to low.
Simmer all the yumminess together.
Add to your choice of shell . . .
and toppings . . .
We paired ours with a pile of sliced strawberries and grilled zucchini.
Note: I find my seasoning packets at Whole Foods, and I just make sure they do not have any oil or sugar and no extras, just spices.
