Fajita Pasta Salad

Serves: 7 (1/2 cup servings)
Ingredients:
1 ½ cup whole wheat pasta, I use Penne
1 green pepper
1 red pepper
1 ½ cup corn, frozen and then thawed
1 handful of olives sliced
1 packet organic fajita seasoning
½ cup Vegenaise
½ cup tomatillo salsa (Herdez}
Optional Ingredients:
Chopped cilantro
Halved cherry tomatoes
Avocado, cubed
Rinsed and drained black beans
Directions:
Boil pasta, drain and set aside.
Chop peppers.
Slice olives.
Defrost corn.
Put all ingredients including any optionals into a bowl.
Mix Vegenaise, tomatillo and ½ of the fajita packet together until well blended.
Pour over pasta and mix.
Chill in fridge until it is time to serve.
Sprinkle on a bit of cilantro before serving.
