Once I wrapped my head around the idea of becoming plant-strong my first question was, “What do I cook?” As I talk to more and more people about making the same transition there seems to be a theme that without the meat in the spotlight it becomes difficult to visualize what will be on the dinner plate.

Don’t let this impede you from moving forward, I say just jump, but first pack a trusty parachute with some beginner bites from the following websites and blogs.
Finding Vegan - Pros: beautiful photography and layout, huge selection of recipes, aesthetically pleasing and easy to use. Cons: you must be careful because some of the recipes look delicious but have a lot of hidden fat, use substitutes for sure.
Virtually Vegan Mama: Pros: once again a photographer’s site and so the aesthetics are awesome; I also have tried a handful of recipes from this site and they are delicious, I would recommend the Baked Cinnamon Sweet Potato Fries and Apple Date Butter dipping sauce. Also, most recipes are China Study approved. Cons: We need more recipes from this lovely lady!
And of course, Happy Herbivore - She just has it all, mostly China Study approved, a lot of recipes plus more if you buy her book, she also has a feature where you can compile your grocery list by choosing from her recipes and the website automatically creates it.
And last, vegan recipes are just one more lovely use for the versatile Pinterest, click here to see my board.
These are a list of my favorites, what websites do you frequent?
Do tell . . .
And don’t forget to try out our Recipes page, growing little by little (all tried and true and omnivore friendly) — I have a few new additions to get your mouth watering:
Snickerdoodle Crispies – part of that 100-calorie sweet treat allowance in a day.
Spiced Fruit Spread – this is heavenly-not joking-and perfect with nutty Almond Spread on a hearty piece of whole wheat .
Potato + Veggie Stew – a staple in my meal planning and perfect to share with neighbors feeling under the weather.
Fajita Pasta Salad – won over the omnivores in my extended fam this week.
Spinach and Apple Muffins – our namesake and a yummy one at that
I hope you enjoy — I am off to a Bed and Breakfast in Eden (a tiny two-restaurant town), armed with my plant-strong staples. I will report next week on plant-strong travel and share with you the tips and hints I gather.
I hope you enjoy!
Viv!
